Oat Cookies
I love to make cookies on a cold springtime morning and then sit for morning tea at the window with a cookie and a cup of warm tea. I listen to the birds as they tweet and chatter greetings to each other and watch the garden awaken after their long winter slumber.

Ingredients

1/2 cup Butter
1 1/2 cup soft brown sugar
2 eggs, beaten
1 1/2 cups flour
1/2 tsp baking powder
3 cups rolled oats
(cranberries or raisins optional)

​
small pan for melting butter
mixing bowl
measuring cups
wooden spoon
baking sheet and liner

Method
​
Preheat your oven to 180C/350F. Line a baking sheet.
Measure out your ingredients into separate bowls.
Melt the butter over a low heat and then pour it into your mixing bowl.
Add the brown sugar and stir until combined.
Add your eggs and stir well.
Mix the baking soda into the flour and then add to the butter mixture a little at a time, stirring as you go.
Gently stir through the oats until only just combined. Add raisins if using.
Begin rolling golf ball-sized lumps of dough in your hands and place them on the baking sheet.
Once you have used all of the dough, press each one flat with the palm of your hand.
Place into your preheated oven and bake for 15 minutes or until lightly browned.
Cool completely before serving.
